The Wine
Dry, savoury and in our opinion some of the better styles of rosé out there. Made via the saignée, or “bleeding” method, where juice is drained from a red wine ferment to build extra colour, depth and texture while remaining bone dry. Crunchy raspberry fruit, wild herbs and a graphite-like mineral finish make this rosé killer for food pairings.
The Producer
Located in the tiny hamlet of Panzoult, on the very eastern edge of Chinon, this domaine has been farmed by the Desbourdes family since the 1960's. After becoming passionate about organics during a stint with Vincent Laval in Champagne, energetic son Boris immediately
begin the transition, and organic certification was achieved in 2018. 15 hectares are planted on a mix of gravelly river sand and also limestone hillsides. The wines themselves combine the best of traditional Chinon with a fresh, modern approach.
